Porcupine Meatballs Recipe

Do you ever have one of those recipes where you don’t even need to look at it because you’ve made it so much you just know it by heart? That’s exactly what porcupine meatballs are to me! I’ve been cooking this recipe for my family since high school, if not even earlier than that.

These delicious porcupine meatballs are a great, easy to make recipe that the entire family with love! You can have supper on the table with just ten minutes of prep work!

Get your ingredients together. You’ll need one pound of ground beef, 1/3 cup uncooked white rice, 1/4 cup chopped onion (or just use some onion seasoning), 1/4 cup water, 1 teaspoon salt, a dash of pepper, 1 can of tomato soup, 1/2 teaspoons of chili powder, and another 1/2 cup of water. 

Combine the tomato soup, chili powder, and 1/2 cup water. Bring this to a boil in your saucepan. 

While you are waiting for your tomato mixture to boil, put your meat mixture together. That means you want to combine the beef, rice, onion, 1/4 cup water, salt, and pepper. 

Form your meatballs. You’ll have somewhere between 12-15 when you are done. (You can simply use your hands, but I’ve found an ice cream scoop to be very effective!) Place them into the boiling tomato mixture. 
Reduce the heat on your saucepan. We normally go down to about medium. Put a lid on the meatballs, and let them simmer for one hour.
